80 % Merlot topped up with 20% Semillon from Jeff organically farmed vineyard in Vine vale, East of the Barossa. Vines grown on deep sand over red clay and benefits from the cool night air coming down from the Eden Valley Ridge to create a good diurnal temperature to favorise phenolic ripeness. Jeff has been managing his vineyard organically without any herbicides, pesticides, fungicides & other chemicals for more than 20 years. Spray of Sulfur & Copper are very few due to a dry & windy growing season which help keep the disease pressure low.
Both grappes have been hand picked by a crew of legends & whole bunch tipped into a stainless steel tank to undergo a carbonic maceration for one week. After that week the fermentation kicked started & the ferment had three days of foot stomping, once a day, to extract some colour & aromatic & break down the carbonic effect. Pressed in a horizontal bag press and finish the fermentation in stainless before going to old seasoned French barrique and demi muid for élevage over winter. Bottled without any additions, no filtration, no fining, no SO2: Pur Jus.
Al Dente 2021
100% Chardonnay from David organically farmed vineyard in Vine Vale, close to Tanunda. The Vines thrives through deep sand over red clay soil with a east/west facing. Beneficial diurnal temperature thanks to the cool air coming at night from the Eden Valley Ridge few 100 meters away. The vineyard has been managed without any chemicals for about 15 years & see only a couple of spraying due to the dry & windy condition which maintain the disease pressure low naturally.
These are the first grapes we picked for 2021, all hand picked and whole bunched tipped into a stainless steel tank & enclosed to undergo carbonic maceration for about a week till the primary fermentation really pick up. Foot stomped once a day for 3 days to progressively extract the sugar out of the berries & feed the yeast. The tank is then completely sealed up at the end of the primary fermentation and kept closed for seven weeks. The must has been pressed in a horizontal press quite oxidatively before heading to old seasoned French barriques which were filled to 80% & un topped for the full length of élevage of four month. As a result the barriques have seen the formation of a yeast veil on top of the wine with a slight influence on its aromatic & its alcohol content.
