Château – Chalon is an appellation for the famous Vin Jaune, regarded as the unofficial grand cru area and the wines under this appellation are considered the finest wines of the region. The local producers agree not to produce under the Château – Chalon name when the weather is not ideal and they have lower quality grapes, which is what happened in 1974, 1980, 1984 and 2001.
Intense aromas and flavours of lemon, lime, green apple, bread dough, walnuts, ginger, curry, roasted tobacco and a complex array of spices, can be found in this medium bodied wine, along with a mouth-watering acidity and a long, persistent finish. Ideal for foodmatching, our suggestions are mushroom risotto, curry or aged cheddar and Jura’s Comté Cheese.
